Description

This couscous bowl with curry-coconut chicken is a real taste experience! The combination of tender chicken, exotic curry-coconut sauce and fluffy couscous is simply irresistible. I love how quick and easy this dish is to prepare - perfect for a stressful weeknight. The snow peas add a crunchy bite and the lime adds a fresh note. If you like it a little spicier, you can add a pinch of chili. A great dish that is guaranteed to please everyone and is also great to prepare in advance!

Ingredients (13 ingredients)

  • 1 tsp Tomato paste
  • 2 tsp Olive oil
  • 1 tsp Vegetable broth, granulated
  • to taste Salt
  • to taste Pepper
  • 200 g Couscous
  • 200 g Chicken breast fillet
  • 1 piece Onion
  • 125 g Snow peas
  • 1 clove Garlic
  • 1 tsp Curry powder
  • 100 ml Coconut milk
  • 1 piece Lime

Preparation (6 steps)

Prepare couscous

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 teaspoon tomato paste and 2 teaspoons olive oil to the mixing bowl and heat for 3 min./120°C/speed 1. Add 1 teaspoon vegetable stock and 400 ml water and bring to the boil for 5 min./100°C/speed 1. Season the boiling stock with a little salt and pepper. Pour over the couscous in a mixing bowl and stir through. Cover and leave to swell until the couscous has absorbed all the liquid.

Fry chicken

Cut 200 g chicken breast fillet into cubes and fry in a coated pan for 5 minutes over high heat.

Sauté vegetables

Peel and chop 1 onion. Halve 125 g snow peas and add both to the chicken breast fillet. Press in 1 clove of garlic. Fry everything for 5 minutes over medium heat, stirring occasionally.

Prepare curry-coconut sauce

Sprinkle with 1 teaspoon curry powder and deglaze with 100 ml coconut milk. Simmer for a further 5 minutes. Season with salt, pepper and lime juice.

Fry couscous

Fry the soaked couscous in a pan without adding any fat.

Arrange

Arrange the fried couscous with the curry-coconut chicken and serve.
