Description

This dish is a wonderful way to turn fresh zucchini into a delicious and light meal. The zucchini spaghetti, combined with normal spaghetti, make a great noodle duet. The creamy sauce with basil and cheese makes the dish an absolute delight. Perfect for a warm summer evening or as a quick lunch. I like to make it when things need to be quick and I still want something healthy on the table. The preparation is straightforward and the result is simply delicious!

Ingredients (9 ingredients)

  • 300 g Spaghetti
  • 300 g Zucchini
  • 0.5 bunch Spring onions
  • 50 g Hard cheese
  • 0.5 bunch Basil
  • 250 ml Light cooking cream
  • 3 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Preparation (8 steps)

Grate hard cheese

Thermomix® Setting
10 sec/Speed 8

Put 50 g hard cheese in pieces into the mixing bowl and chop for 10 sec./speed 8. Transfer and set aside.

Chop basil

Thermomix® Setting
3 sec/Speed 5

Put ½ bunch of basil (except for a few leaves for garnish) into the mixing bowl and chop for 3 sec./speed 5. Transfer and set aside.

Cook noodles

Thermomix® Setting
12 min/212°F/Speed 1 100

Put 300 g spaghetti, salt and 1 liter water into the mixing bowl and cook for 12 min./100°C/speed 1 without the measuring cup. Approx. 2 minutes before the end of the cooking time, add the 2 zucchinis (à approx. 150 g) processed into spaghetti with a spiral slicer through the lid opening and cook.

Drain noodles

Drain the noodles and zucchini spaghetti through the steamer basket and let them drip.

Prepare sauce

Thermomix® Setting
3 min/140°F/Speed 2 60

Put 250 ml light cooking cream and half of the grated hard cheese into the mixing bowl and heat for 3 min./60°C/speed 2 until the cheese has melted.

Sauté spring onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 3 tbsp olive oil and ½ bunch of spring onions, cut into rings, into the mixing bowl and sauté for 3 min./120°C/speed 1.

Mix noodles and sauce

Thermomix® Setting
2 min/Linkslauf/Speed 2 Reverse

Add the drained noodles, chopped basil, salt and pepper to the spring onions in the mixing bowl and mix for 2 min./reverse/speed 2.

Arrange the noodles with the sauce and garnish with the remaining hard cheese and basil.
