Description

This sweet couscous salad is an explosion of exotic flavors! I love preparing it in the summer, when the mangoes are ripe and juicy. The dried strawberries add a gourmet touch and the fresh mint brings an incomparable note of freshness. It's a light and refreshing dessert, perfect for ending a meal on a fruity note. The couscous, soaked in orange and lime juice, becomes incredibly soft and fragrant. A real treat for the taste buds, easy to prepare and always appreciated!

Ingredients (8 ingredients)

  • 2 cuillères à soupe raisins
  • 2 cuillères à soupe minced mint
  • 1 cuillère à soupe icing sugar
  • 1 piece lime
  • 50 gr dried strawberries
  • 1 piece mango
  • 1 piece large orange
  • 100 gr couscous grains

Preparation (6 steps)

Preparation of citrus juice

Squeeze the oranges and top up with water if necessary to obtain 15 cl of juice. Squeeze the lime and mix with the orange juice in a container. Cover with cling film and set aside in the refrigerator.

Couscous preparation

Pour the couscous grains into a large salad bowl. Add the citrus juice mixture prepared previously. Also add 1 tablespoon of icing sugar as well as the raisins. Mix gently with a fork. Leave to swell in the refrigerator for at least 1 hour.

Mango preparation

Peel the mango, remove the pit and cut the flesh into dice. Set aside.

Cutting dried strawberries

Cut the dried strawberries into small pieces. Set aside.

Mixing fruits and couscous

In a salad bowl, gently mix the diced mango, the pieces of dried strawberries, the swollen couscous and half of the minced mint. Put back in the refrigerator until ready to serve.

Finalization and service

Before serving, gently mix the couscous salad and sprinkle with the rest of the minced mint.
