Description

These small packages with fish and vegetables are a light and delicious dish that is perfect for a quick dinner. I like to make them when I have some vegetables left in the fridge that need to be used up. The combination of tender fish, crunchy vegetables and a touch of soy sauce is simply irresistible. The preparation is straightforward and does not take long, making it ideal for cooking beginners. You can also vary the recipe well by using other vegetables or types of fish. A dash of lemon juice at the end rounds off the dish perfectly. Simply delicious!

Ingredients (9 ingredients)

  • 4 hojas large smooth cabbage
  • 2 piece portion-sized dabs
  • 1 trozo pumpkin
  • 0.5 piece onion
  • 1 trozo red pepper
  • 2 cucharadas low-salt soy sauce
  • 1 cucharada water
  • 3 cucharadas evoo
  • Water for cooking

Prepare cabbage leaves

Add water to the mixing bowl and bring to a boil. Add the cabbage leaves and cook for 7 min./100°C/speed 1. Then remove the cabbage leaves and let them drain.

Prepare vegetables

Put half the onion in the mixing bowl and chop for 3 sec./speed 5. Add the olive oil and sauté for 3 min./120°C/speed 1.

Add vegetables

Add the pumpkin pieces and the bell pepper to the mixing bowl and chop for 5 sec./speed 4. Then add to the sautéed onion and sauté for another 5 min./120°C/speed 1.

Prepare fish

Remove the bones from the fish fillets and tear into small pieces.

Add fish and sauce

Add the shredded fish, soy sauce and water to the vegetables in the mixing bowl. Mix everything and simmer for 5 min./100°C/reverse speed 1 until the sauce is reduced.

Fill and serve packages

Place a spoonful of the fish and vegetable mixture on each cabbage leaf, form the leaves into packets and drizzle with olive oil. Serve immediately.

These little packages of fish and vegetables are a recipe that reminds me of my grandmother. She was always looking for ingenious ways to use seasonal vegetables and make fish more appealing to children, including me! Although she didn't have a Thermomix®, the spirit of this recipe, the simplicity and the use of leftovers, is totally hers. The smooth cabbage, with its large and flexible leaves, acts as the perfect wrapper for this healthy bite. Its mild and slightly sweet flavor complements the rest of the ingredients without overpowering them. The portion-sized dabs, with their white and delicate flesh, provide the main protein. It is important to make sure they are fresh and boneless for a more enjoyable experience. The pumpkin, with its creamy texture and slightly sweet flavor, adds a touch of color and nutrients. The onion and red pepper, finely chopped, provide an aromatic flavor and a touch of sweetness that balances the saltiness of the soy sauce. Low-salt soy sauce is key to enhancing the flavors without overloading the dish with sodium. A splash of water helps create steam inside the Thermomix® that cooks the fish and vegetables to perfection. And, of course, extra virgin olive oil, a fundamental ingredient in Mediterranean cuisine, provides a rich and healthy flavor. For preparation in the Thermomix®, it is important not to overload the bowl when cutting the vegetables. If necessary, do it in two batches. When cooking the fish with the vegetables, use the "stir to the left" function to prevent it from falling apart too much. If you prefer a crispier texture in the vegetables, reduce the cooking time in step 3. This dish is very versatile. For a vegetarian or vegan version, you can substitute the fish with firm tofu cut into cubes or with sliced portobello mushrooms. You can also experiment with different spices and aromatic herbs. A little grated ginger, a touch of chili powder or a few fresh cilantro leaves can completely transform the flavor of the dish. To serve, you can accompany the packages with steamed basmati rice, a fresh salad or steamed potatoes. A drizzle of fresh lemon juice just before serving enhances the flavors and adds a refreshing touch of acidity. If you have any leftover packages, you can store them in an airtight container in the refrigerator for a maximum of two days. To reheat them, you can use the microwave or the oven.
