Description

These fallow deer liver pralines are an extraordinary finger food that I particularly like to prepare for festive occasions. The combination of the fine liver, the creamy mashed potatoes and the crispy panko breading is simply delicious. The preparation takes some time, but the result is worth the effort. The pralines can be prepared well in advance and fried shortly before serving. A touch of balsamic cream perfectly rounds off the dish. A real eye-catcher and treat for special moments!

Ingredients (15 ingredients)

  • 0.5 Stück Fallow deer liver
  • 500 Gramm Potatoes, floury
  • Nutmeg
  • Pepper
  • Salt
  • 1 Tasse Milk
  • 1 Stück Butter
  • 2 Stück Bittersweet gingerbread
  • 0.5 Stück Shallot
  • Panko breadcrumbs
  • Pistachio kernels
  • 1 Stück Egg
  • Flour
  • Frying oil
  • Balsamic cream

Preparation (9 steps)

Prepare fallow deer liver

Remove the fallow deer liver from veins and outer skin. Then cut the liver into slices and place in a bowl. Pour the milk over the liver and let it soak for about 30 minutes.

Cook potatoes

25 min/Varoma/Speed 1 Varoma

Peel, quarter and place 500 grams of potatoes in the steamer basket. Add 500 ml of water to the mixing bowl, insert the steamer basket and cook for 25 min/Varoma/speed 1.

Prepare mashed potatoes

Thermomix® Setting
20 sec/Speed 4

After cooking, add the potatoes to the mixing bowl. Add 1 cup of milk and 1 piece of butter. Process into a creamy mash for 20 sec/speed 4. Season with salt, pepper and nutmeg and stir for another 5 sec/speed 3.

Shape and cool mashed potatoes

Fill the mashed potatoes into a silicone mold and use your thumb to form a hollow in the middle. Place the filled mold in the freezer for 3 hours.

Prepare liver slices

10 sec/Speed 8

Remove half of the pickled liver slices from the milk and dice finely. Add the rest of the liver slices together with half a gingerbread to the mixing bowl and puree for 10 sec/speed 8. Season with salt and pepper and stir for another 3 sec/speed 3.

Fill and shape pralines

Place the liver mixture into the frozen potato halves, press two halves together and carefully remove from the mold.

Bread the pralines

Add one egg to the mixing bowl and whisk for 5 sec/speed 4. Brush the pralines with the whisked egg and then roll in panko breadcrumbs.

Prepare shallot

Thermomix® Setting
3 sec/Speed 5

Peel half a shallot, halve it and place it in the mixing bowl. Chop for 3 sec/speed 5. Push down with the spatula.

Prepare pistachios

Thermomix® Setting
3 sec/Speed 5

Add pistachio kernels to the mixing bowl and chop for 3 sec/speed 5. Push down with the spatula.
