Description

This refreshing Lemon and Mint Mousse is an absolute delight for warm summer days! I always enjoy making it because it is so easy and quick to prepare. The combination of creamy mascarpone, tangy lime juice, and fresh mint is simply unbeatable. Perfect as a light dessert after a rich meal or just in between. The mousse is vegetarian and gluten-free, so suitable for many. A little dash of Rum provides that certain something, but can also be omitted. Enjoy!

Ingredients (6 ingredients)

  • 140 g fresh cream
  • 40 g icing sugar
  • 160 g mascarpone
  • 40 ml rum
  • 40 ml lemon juice
  • fresh mint

Preparation (6 steps)

Fresh cream and icing sugar in the bowl

Pour 140 g of fresh cream and 40 g of icing sugar into the bowl.

Whip the cream

Whip the cream for 2 Min./Speed 3 with the butterfly.

Add mascarpone, rum and lemon juice

Add 160 g of mascarpone, 40 ml of rum and 40 ml of lemon juice into the bowl.

Mix gently

20 Sec./Speed 2

Mix gently for 20 Sec./Speed 2 with the butterfly.

Add the mint

Thermomix® Setting
5 Sec./Speed 4

Add the fresh mint to taste in the bowl and mix for 5 Sec./Speed 4.

Pour into bowls and cool

Pour the mousse into 4 individual bowls and cool in the refrigerator for at least 3 hours before serving.
