Description

This potato gratin is a delicious variation of the classic Swedish recipe. The small new potatoes are cut in a fan-like manner and baked in a creamy sauce of sour cream and crème fraîche. The highlight is the crispy crust of butter, diced ham and toast, refined with fresh rosemary. A hearty dish that is convincing as a main course as well as a side dish. It tastes especially delicious in autumn and winter, when you long for something warming. A fresh green salad goes well with it.

Ingredients (8 ingredients)

  • 200 g Sour cream
  • 200 g Crème fraîche
  • 400 ml Meat broth very strong
  • 1000 g New potatoes small
  • 50 g Butter
  • 75 g Farmhouse ham diced
  • 1 tsp Rosemary needles fresh, finely chopped
  • 5 Scheibe/n Toast diced

Prepare sauce

Thermomix® Setting
20 sec/Speed 3

Put sour cream, crème fraîche and meat broth into the mixing bowl and stir for 20 sec./level 3. Then pour the mixture into a large casserole dish.

Prepare potatoes

Wash the potatoes well and cut several times, but do not cut all the way through. They should still be connected at the bottom. The distances between the cuts should be similar to those of an egg slicer.

Put potatoes in the dish

Place the potatoes with the cut side up in the casserole dish. But only next to each other - do not stack them on top of each other - so that they are about halfway in the sauce.

Melt butter

Thermomix® Setting

Put butter in the mixing bowl and melt for 3 min./50°C/level 2.

Prepare ham-bread mixture

Thermomix® Setting
15 sec/Linkslauf/Speed 2 Reverse

Add diced ham, rosemary needles and diced toast to the melted butter in the mixing bowl and mix for 15 sec./reverse/level 2.

Spread crust and bake

Spread the ham-bread mixture on the potatoes and bake in a preheated oven at 200 °C top/bottom heat for approx. 45 - 60 minutes on the middle rack until the bread cubes are nicely brown and the potatoes are cooked.
