Description

This pork fillet in creamy mustard sauce is an absolute highlight for every meat lover! I like to make it when I need something quick, but still want something special on the table. The tender pork fillet, combined with the spicy mustard sauce, is simply irresistible. The sauce gets a particularly creamy consistency from the sour cream. Rice, pasta or simply a fresh salad go well with it. A dish that is guaranteed to please everyone and can be wonderfully integrated into everyday life.

Ingredients (11 ingredients)

  • 1 piece Onion
  • 3 piece Spring onions
  • 800 g Pork fillet
  • 2 tbsp Clarified butter
  • 1 tbsp Flour
  • 200 g Cream
  • 200 ml Meat broth
  • 3 tbsp Sour cream
  • 1 tsp Dijon mustard
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Chop onion

Place 1 onion in the mixing bowl and chop for 3 sec./level 5. Scrape down with the spatula.

Sauté onions

Leave the chopped onion in the mixing bowl. Add 2 tbsp clarified butter and sauté for 3 min./120°C/level 1.

Add spring onions

1 min/248°F/Speed 1 120

Cut 3 spring onions into rings and add to the onions in the mixing bowl. Sauté for 1 min./120°C/level 1.

Add flour

Thermomix® Setting
20 sec/212°F/Speed 2 100

Add 1 tbsp flour to the mixing bowl and sauté for 20 sec./100°C/level 2.

Prepare sauce

Thermomix® Setting
5 min/194°F/Speed 2 90

Add 200 g cream, 200 ml meat broth, 3 tbsp sour cream and 1 tsp Dijon mustard to the mixing bowl and stir for 5 min./90°C/level 2.

Thermomix® Setting
10 sec/Speed 3

Season the sauce with salt and pepper and stir for 10 sec./level 3.
