  • 4 piece Hake fillets
  • 2 piece Avocado(s)
  • 0.5 piece Lemon(s)
  • 1 c. à soupe Tomato concentrate
  • Salt
  • Pepper

Preparation (9 steps)

Preheat the oven

Preheat the oven to 240°C (th.8). This step is crucial for rapid and even baking of the foil packets.

Extract the lemon juice

Thermomix® Setting
10 sec/Speed 5

Cut the half lemon in half and squeeze it into the Thermomix bowl to extract the juice. Set the Thermomix to 10 Sec./Level 5 to extract the juice well. Reserve a tablespoon of juice.

Prepare the avocado

Peel the avocados, cut them into pieces and immediately sprinkle them with the reserved lemon juice to prevent them from blackening. Reserve some pieces for decoration.

Mix the avocado preparation

Thermomix® Setting
20 sec/Speed 8

Place the avocado pieces in the Thermomix bowl with the tablespoon of tomato concentrate, salt and pepper. Mix everything for 20 Sec./Level 8 until you obtain a smooth cream. Reserve the preparation.

Prepare the foil packets

Cut out 8 large rectangles of aluminum foil. Make sure they are large enough to hold the fish fillets and be well closed.

Garnish the fish fillets

Spread both sides of the hake fillets with the avocado-based preparation. Then place each fillet in the middle of a rectangle of aluminum foil.

Close the foil packets

Place another rectangle of aluminum foil on each fillet and weld the edges well to form airtight foil packets. Make sure there are no leaks for optimal steaming.

Bake the foil packets

Slide the foil packets into the preheated oven and bake for 20 minutes. Steaming inside the foil packets guarantees tender and flavorful fish.

Serve

Serve a foil packet per guest, accompanied by fragrant rice and decorated with the reserved avocado pieces. Enjoy immediately to enjoy all the flavors.
