Description

A light and tasty second course, perfect for a summer dinner! The gilt-head bream fillets, cooked with fresh cherry tomatoes, garlic and a touch of white wine, release an irresistible scent. The preparation is simple and quick, also ideal for those who have little time. I love to accompany this dish with a side of grilled vegetables or a fresh salad. A delicious alternative to enjoy fish in a healthy and tasty way. Try it, you won't regret it!

Ingredients (8 ingredients)

  • 2 piece whole gilt-head bream, butterflied fillets
  • 4 piece cherry tomatoes
  • 2 clove garlic
  • 80 ml dry white wine
  • 80 ml olive oil
  • 0.01 q.b. fine salt
  • 0.01 q.b. pepper
  • 0.01 q.b. chopped parsley

Preparation (6 steps)

Flavored garlic and oil

Thermomix® Setting

Pour 80 ml of olive oil and 2 cloves of garlic into the bowl. Set 3 Min./120°C/Level 1.

Addition of cherry tomatoes

5 min/212°F/Speed 1 100

Add 4 cherry tomatoes, cut in half, to the bowl. Set 5 Min./100°C/Level 1.

Cooking the fish

Remove the garlic from the bowl. Gently place 2 whole gilt-head bream, butterflied fillets (or 4 fillets) in the bowl. Season with fine salt to taste, pepper to taste and chopped parsley to taste.

Deglaze with the wine

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Add 80 ml of dry white wine to the bowl. Set 3 Min./Varoma/Level 1 without the measuring cup to evaporate the alcohol.

Complete the cooking

5 min/212°F/Speed 1 100

Cover the bowl with the lid. Set 5 Min./100°C/Level 1.

Serve

2 min/Varoma/Speed 2 Varoma

Move the fish to the serving dishes. Set 2 Min./Varoma/Level 2 to reduce the cooking juices slightly. Pour the reduced sauce over the gilt-head bream fillets. Serve the pan-fried gilt-head bream immediately, completing, if we want, with a drizzle of raw oil and more fresh parsley to taste.
