Description

Pork fillet in a creamy mushroom sauce, served with Spätzle.

Ingredients (21 ingredients)

  • 650 g Pork fillet(s)
  • 150 g Bacon
  • 3 EL Oil
  • 750 g Mushrooms
  • 50 g Butter
  • 100 g Cured bacon
  • 2 m.-große Onion(s)
  • 2 Zehe/n Garlic
  • 1 EL Tomato paste
  • 200 ml Cream
  • 100 ml Crème fraîche
  • 100 ml Broth
  • 100 ml White wine
  • Worcestershire sauce
  • Salt and pepper
  • Flour
  • Herbs
  • 400 g Spätzle
  • 1 TL, gehäuft Salt
  • 2 EL Oil
  • Butter

Preparation (10 steps)

Prepare onions and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Peel and quarter 2 medium-sized onions. Peel 2 cloves of garlic. Place the onions in the mixing bowl and chop for 3 seconds/speed 5. Add the garlic and chop for another 3 seconds/speed 7. If necessary, use the spatula to push everything down from the edge.

Sauté onions and garlic

Add 100 g of diced cured bacon (or bacon cubes) and 3 tablespoons of oil (or clarified butter) to the onions and garlic in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Prepare and sauté mushrooms

5 min/248°F/Speed 1 120

Clean 750 g of brown mushrooms and halve or quarter them depending on their size. Add the mushrooms, 50 g of butter and 1 tablespoon of tomato paste to the mixing bowl and sauté for 5 minutes/120°C/speed 1.

Prepare sauce

10 min/212°F/Speed 2 100

Add 200 ml cream, 100 ml crème fraîche, 100 ml broth and 100 ml white wine to the mushrooms in the mixing bowl. Season with some Worcestershire sauce, salt and pepper. Simmer everything for 10 minutes/100°C/speed 2.

Thicken sauce

2 min/212°F/Speed 2 100

If the sauce is too thin, mix some flour or cornstarch with a little cold water and add to the mixing bowl. Simmer for another 2 minutes/100°C/speed 2 until the desired consistency is reached.

Cook Spätzle

Thermomix® Setting
15 min/212°F/Speed 1 100 Reverse

Add 400 g Spätzle, 1 teaspoon salt and 2 tablespoons oil to the mixing bowl. Cover with water so that the Spätzle float well. Cook for 15 minutes/100°C/speed 1 in reverse. Then pour the Spätzle into a sieve.

Refine Spätzle

Toss the drained Spätzle with some butter in a pan.

Prepare pork fillet

Cut 650 g pork fillet into approx. 2 cm thick slices. Wrap each slice with 2-3 slices of bacon (cut as long as possible).

Fry pork fillet

Fry the wrapped pork fillet in a pan with some oil on all sides until golden brown. Then season with salt and pepper.

Refine and serve sauce

Refine the sauce with fresh herbs (parsley, chives, etc.) as needed. Serve the pork fillet with the mushroom cream sauce and the Spätzle.
