Description

This Sicilian stuffed bread roll, or seasoned bread, is a true explosion of Mediterranean flavors! I still remember when I tasted it for the first time during a vacation in Sicily: an explosion of fresh cherry tomatoes, tasty primosale cheese and anchovies in oil, all enhanced by olive oil and oregano. Preparing it is very simple and quick, perfect for a light lunch, a delicious aperitif or an outdoor picnic. Letting it rest for a couple of hours allows the flavors to blend better, but if hunger calls, you can enjoy it immediately! An excellent vegetarian alternative is obtained by omitting the anchovies.

Ingredients (8 ingredients)

  • 1 piece bread roll
  • cherry tomatoes
  • primosale cheese
  • anchovies in oil
  • olive oil
  • oregano
  • pepper
  • fine salt

Preparation (6 steps)

Bread preparation

Cut the bread roll in half horizontally. If desired, remove some of the crumb from the center to create more space for the filling.

Bread seasoning

Brush both sides of the bread with olive oil. Sprinkle with fine salt, pepper and oregano.

Bread pressing

Close the bread and press lightly to allow the seasoning to penetrate well. Let it rest for 2 minutes.

Filling with cherry tomatoes

Open the bread again and form a layer of sliced cherry tomatoes on the lower half.

Addition of primosale cheese and anchovies

Place the slices of primosale cheese on the cherry tomatoes and finish with the anchovies in oil.

Final pressing and resting

Close the bread, press again to flavor the seasoned bread. Ideally, it should rest for a couple of hours to blend the flavors, but it can also be enjoyed immediately.
