Description

Fine butter cookies from the Thermomix® are a classic for Christmas time. With just a few ingredients like lemon, flour, butter, sugar, and egg yolks, you can make about 40 delicious cookies. The total preparation time is 170 minutes, of which 30 minutes are active working time. Ideal as a sweet breakfast, finger food, or dessert for the whole family. This recipe is perfect for anyone who enjoys baking and loves Christmas treats.

Ingredients (7 ingredients)

  • 1 Stück Organic Lemon
  • 250 g Wheat Flour Type 405
  • 100 g Sugar
  • 125 g Cold Butter
  • 4 Stück Egg Yolks
  • 1 EL Milk
  • 50 g Pearl Sugar

Preparation (8 steps)

Grate the Lemon Zest

Wash the lemon with hot water, rub dry, and grate the zest. Set aside one teaspoon of the grated lemon zest for the dough, and use the rest for something else.

Mix Flour, Sugar, and Lemon Zest

Put 250 g wheat flour type 405, 100 g sugar, and 1 teaspoon grated lemon zest into the mixing bowl and mix for 10 sec/speed 4.

Add Butter and Egg Yolks and Knead

Add 125 g cold butter in flakes and 2 egg yolks and knead into a dough for 2 min/kneading stage.

Chill the Dough

Shape the dough into a ball, wrap in plastic wrap, and chill in the refrigerator for at least 2 hours.

Roll out and Cut out Cookies

Roll out the dough in portions on a lightly floured work surface. Cut out cookies and place them on a baking sheet lined with baking paper, leaving some space between them.

Prepare Egg Yolk-Milk Glaze

In a small bowl, whisk together the remaining 2 egg yolks and 1 tbsp milk with a fork.

Brush Cookies and Sprinkle with Pearl Sugar

Brush the cookies with the egg yolk-milk mixture and sprinkle with 50 g pearl sugar.

Bake Cookies

Bake the cookies in a preheated oven at 175 °C top and bottom heat for 10-12 minutes until golden brown.
