Description

This potato and carrot puree is a real classic that I always enjoy preparing. It is so easy and quick to make, perfect for a stressful evening. The sweetness of the carrots harmonizes wonderfully with the potatoes and fresh parsley. A touch of nutmeg rounds off the whole thing. We often have the puree as a side dish to meat or fish, but it also tastes delicious on its own. A great vegetarian dish that the whole family loves!

Ingredients (7 ingredients)

  • 650 g Potatoes, floury
  • 400 g Carrots
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg
  • 2 tbsp Butter
  • 0.5 bunch Parsley, smooth

Preparation (4 steps)

Prepare potatoes and carrots

Peel, clean and cut the potatoes and carrots into approx. 2-3 cm cubes.

Cook potatoes and carrots

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Pour 500 ml water into the mixing bowl. Insert the steamer basket, add the potato and carrot cubes and season with salt. Close the lid and cook for 20 min./Varoma/speed 1.

20 sec/Speed 4

After cooking, remove the steamer basket and pour the water out of the mixing bowl. Put the cooked potatoes and carrots back into the mixing bowl. Add 2 tbsp butter, salt, pepper and freshly grated nutmeg and puree for 20 sec./speed 4. If necessary, push down with the spatula and repeat the process until the desired consistency is reached.

Add parsley

Finely chop the parsley and stir into the puree. Serve the puree immediately.
