Description

Fine spritz biscuits from the Thermomix®: This recipe for about 40 pieces uses margarine, sugar, egg and almonds as main ingredients. The preparation takes a total of 57 minutes, of which 30 minutes are active working time. Ideal for Christmas time and festive occasions. A delicious dessert or finger food for the whole family.

Ingredients (9 ingredients)

  • 125 g Margarine (at room temperature)
  • 150 g Sugar
  • 1 packet Vanilla sugar
  • 1 Egg (size M)
  • 1 Egg yolk
  • 40 g Milk
  • 0.5 Lemon
  • 100 g Ground almonds
  • 275 g Flour

Preparation (7 steps)

Mix margarine, sugar and vanilla sugar

30 sec/keine/Speed 4

Add 125 g of margarine at room temperature, 150 g of sugar and 1 packet of vanilla sugar to the mixing bowl and mix for 30 sec/speed 4.

Stir in egg, egg yolk and milk

20 sec/keine/Speed 3

Add 1 egg (size M), 1 egg yolk and 40 g of milk to the mixing bowl and stir in for 20 sec/speed 3.

Grate lemon zest

Finely grate the zest of half a lemon and set aside. The lemon is not used in the Thermomix for this step.

Mix and stir in almonds, flour and lemon zest

Add 100 g of ground almonds, 275 g of flour and the lemon zest to the mixing bowl and stir in for 30 sec/speed 3. If necessary, use the spatula to scrape down from the edge and repeat the process.

Preheat oven

Preheat the oven to 180 °C (convection oven: 160 °C). This step is carried out outside of the Thermomix.

Fill the dough into a piping bag and pipe onto baking trays

Put the dough into a piping bag with a suitable nozzle (we used a star nozzle). Pipe onto baking trays lined with baking paper. This step is carried out outside of the Thermomix.

Bake spritz biscuits

Bake the spritz biscuits in the preheated oven for about 12 minutes until light golden brown. This step is carried out outside of the Thermomix.
