Description

Fine currant biscuits are a delicious Thermomix® recipe for the Christmas season. With butter, almonds, flour and currant jelly, about 40 fine biscuits are created. The preparation takes a total of 105 minutes, of which 45 minutes are active working time. Ideal as Christmas finger food, dessert or for baking with the family.

Ingredients (8 ingredients)

  • 200 g soft Butter
  • 100 g icing Sugar
  • 1 Pck. vanilla Sugar
  • 1 Stück Egg (room temperature)
  • 100 g ground Almonds
  • 200 g Wheat flour Type 405
  • 100 g Currant Jelly
  • 1 TL Lemon juice

Preparation (7 steps)

Mix butter, sugar and egg until frothy

Thermomix® Setting
2 min/keine/Speed 4

Add 200 g soft butter, 100 g icing sugar, 1 pack. vanilla sugar and 1 egg (room temperature) to the mixing bowl and mix for 2 min./speed 4 until frothy.

Mix almonds and flour

Mix 100 g ground almonds and 200 g wheat flour type 405 in a separate bowl.

Knead dough

Thermomix® Setting
2 min/keine/Kneading speed

Add the flour-almond mixture to the mixing bowl and knead for 2 min./kneading stage to form a dough.

Chill dough

Form the dough into a ball, wrap in cling film and refrigerate for at least 1 hour.

Cut out and bake biscuits

Roll out the dough in portions on a lightly floured work surface. Cut out biscuits with a round cookie cutter. Cut out stars from half of the biscuits with a smaller cookie cutter. Place the biscuits on a baking tray lined with baking paper and bake in a preheated oven at 175 °C top and bottom heat for approx. 8-10 minutes. Let cool.

Prepare jelly

Thermomix® Setting
2 min/122°F/Speed 2 50

Put 100 g currant jelly and 1 tsp lemon juice into the mixing bowl and mix for 2 min./50°C/speed 2.

Assemble biscuits

Spread the jelly on the biscuits without a cut-out centre and place the biscuits with the star on top. Dust with icing sugar.
