Prepare the dough

Thermomix® Setting

Add 220 g wheat flour type 405, 3 tbsp olive oil, 1 tsp salt, 1 egg yolk and 100 ml warm water to the mixing bowl and process into a dough for 2 min./kneading stage.

Let the dough rest

Remove the dough from the mixing bowl, place in a bowl, cover with a damp cloth and let rest for 30 minutes.

Roll out the dough

Divide the dough into 4 parts and roll out as thinly as possible. The thinner, the crispier.

Preheat oven

Preheat the oven to 220 degrees top and bottom heat.

Top the flammkuchen

Place the flammkuchen on a baking sheet lined with baking paper. Spread with 200 g crème fraîche and season with salt and pepper.

Bake the flammkuchen

Bake the flammkuchen in the preheated oven for 12-15 minutes until crispy.

Garnish the flammkuchen

Remove the flammkuchen from the oven, top with 150 g smoked salmon and 1 bunch of dill and drizzle with 1 tbsp of lemon juice.
