Description

This salmon flammkuchen is a hearty dish that is ideal as a main course. The dough is prepared in the Thermomix® and then topped with crème fraîche, smoked salmon and dill. The preparation time is about 65 minutes and the recipe is designed for 4 servings.

Ingredients (11 ingredients)

  • 220 g Wheat flour Type 405
  • 3 EL Olive oil
  • 1 TL Salt
  • 1 Stück Egg yolk
  • 100 ml Warm water
  • 200 g Crème fraîche
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 150 g Smoked salmon
  • 1 Bund Dill
  • 1 EL Lemon juice

Preparation (7 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 220 g wheat flour Type 405, 3 tbsp olive oil, 1 tsp salt, 1 egg yolk and 100 ml warm water into the mixing bowl and process into a dough for 2 min./kneading stage.

Let dough rest

Remove the dough from the mixing bowl, put it in a bowl, cover with a damp cloth and let it rest for 30 minutes.

Roll out dough

Divide the dough into 4 parts and roll out as thinly as possible. The thinner, the crispier.

Preheat oven

Preheat the oven to 220 degrees top and bottom heat.

Top flammkuchen

Place flammkuchen on a baking sheet lined with baking paper. Spread with 200 g crème fraîche and season with salt and pepper.

Bake flammkuchen

Bake the flammkuchen in the preheated oven for 12-15 minutes until crispy.

Garnish flammkuchen

Remove the flammkuchen from the oven, top with 150 g smoked salmon and 1 bunch of dill and drizzle with 1 tbsp lemon juice.
