Description

This tarte flambée with plums and goat cheese is a poem! The sweetness of the plums harmonizes wonderfully with the savory goat cheese. Served with a fresh bean salad - simply perfect for a balmy summer evening. I especially like to make it when plums are in season. The preparation is straightforward and the Thermomix® helps to prepare everything quickly and easily. A great dish for guests or just for a cozy evening at home. The bean salad provides a crunchy and fresh component.

Ingredients (14 ingredients)

  • 1 piece Organic lemon
  • 200 g Sour cream
  • to taste Salt
  • to taste Pepper
  • 200 g Plums
  • 1 Pck. Tarte flambée dough (350 g)
  • 100 g Goat cream cheese
  • 500 g Green beans
  • 2 piece Onions (red)
  • 1 tbsp Olive oil
  • 20 g Pine nuts
  • 2 tbsp White wine vinegar
  • 1 tbsp Aceto Balsamico Crema
  • 2 tbsp Honey

Preparation (10 steps)

Prepare lemon zest and juice

Wash the lemon in hot water and dry. Grate the lemon zest with a grater. Set aside 1 teaspoon of lemon zest. Halve the lemon and squeeze out 1-2 tablespoons of juice. Save the remaining lemon juice for the bean salad.

Prepare sour cream

Thermomix® Setting
10 sec/Speed 3

Put 200 g sour cream, 1 teaspoon lemon zest and 1-2 tablespoons lemon juice into the mixing bowl and stir for 10 sec./speed 3. Season with salt and pepper and transfer.

Prepare plums

Wash 200 g of plums, halve, remove the core and cut the pulp into wedges.

Prepare beans and onions

Clean 500 g green beans. Peel and halve 2 red onions.

Chop onions

Put the halved onions in the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula.

Sauté beans and onions

Thermomix® Setting
3 min/248°F/Speed 1 + 7 min/248°F/Speed 1 Linkslauf 120 Reverse

Add 1 tablespoon of olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1. Add the cleaned beans and sauté for another 7 min./120°C/speed 1 with reverse rotation, so that the beans are still slightly crunchy.

Add pine nuts

Add 20 g pine nuts to the beans and onions in the mixing bowl and sauté for 2 min./120°C/speed 1 with reverse rotation.

Season bean salad

Transfer the contents of the mixing bowl to a large bowl. Add 2 tablespoons of white wine vinegar, salt and pepper and mix well.

Top and bake tarte flambée

Preheat the oven to 200 °C top/bottom heat (180 °C convection oven). Roll out 1 pack of tarte flambée dough (350 g) on a baking sheet lined with baking paper. Spread with the prepared sour cream and spread the plums on top. Crumble 100 g goat cream cheese over it and bake for 10-12 minutes.

Refine and serve tarte flambée

Drizzle the baked tarte flambée with 1 tablespoon of Aceto Balsamico Crema and 2 tablespoons of honey and serve with the bean salad.
