Description

This baked coconut flan is a creamy and delicious dessert, perfect for any special occasion. The combination of whole milk, condensed milk and coconut milk creates a smooth texture and an irresistible tropical flavour. I have been preparing it for years and it is always a success at home. The essence of vanilla and coconut, along with a touch of nutmeg, further enhance its aroma and flavour. It is ideal for family celebrations or simply to enjoy a sweet treat. Although it requires a little time, the end result is worth it. Go ahead and try it!

Ingredients (10 ingredients)

  • 1 litro Whole milk
  • 12 piece Whole eggs (yolk and white)
  • 400 ml Condensed milk
  • 400 ml Coconut milk
  • 2 tsp Vanilla
  • 2 tsp Coconut essence
  • 1 pinch Grated nutmeg
  • 3 ramas Cinnamon
  • 300 gramos Candied shredded coconut
  • 500 gramos Sugar

Preparation (7 steps)

Prepare the caramel

Preheat the oven to 170ºC. Place 250 g of sugar in a saucepan and heat over medium heat until a coffee-colored caramel is obtained. Pour the caramel into the mold and spread evenly. Let cool and harden.

Infuse the milk

Thermomix® Setting

In the Thermomix bowl, pour 1 litre of whole milk, a pinch of grated nutmeg, 3 cinnamon sticks and 1 teaspoon of coconut essence. Program 8 Min./90°C/Stufe 2.

Beat the eggs and sugar

In a separate bowl, beat 12 whole eggs with the remaining 250 g of sugar until well combined. Add 400 ml of condensed milk and 400 ml of coconut milk. Beat until combined.

Add the remaining ingredients

Incorporate 2 teaspoons of vanilla, 1 teaspoon of coconut essence and 300 g of candied shredded coconut to the egg mixture. Mix well.

Integrate the infused milk

Strain the hot milk to remove the cinnamon sticks. Pour the infused milk little by little over the egg mixture, beating constantly to prevent the eggs from cooking.

Bake the flan

Pour the mixture into the caramelized mold. Place the mold in a bain-marie and bake for approximately 60-90 minutes, or until a toothpick inserted comes out clean.

Cool and serve

Let the flan cool to room temperature and then refrigerate for at least 2 hours. Unmold and serve cold.
