Description

Fine almond Florentines from the Thermomix® are a festive confection with almond slivers, candied orange peel, candied lemon peel, and hazelnuts. Milk, honey, and butter provide the typical caramel note. Preparation takes about 110 minutes, of which 45 minutes are active work. The recipe yields approximately 20 Florentines and is ideal as Christmas finger food or dessert. Perfect for the festive coffee table in winter.

Ingredients (9 ingredients)

  • 25 g Glacé Cherries
  • 25 g Candied Orange Peel
  • 25 g Candied Lemon Peel
  • 100 g Chopped Hazelnuts
  • 125 ml Milk
  • 100 g Honey
  • 60 g Butter
  • 100 g Almond Slivers
  • 150 g Dark Chocolate Couverture

Preparation (8 steps)

Prepare dried fruit

Place 25 g of glacé cherries, 25 g of candied orange peel and 25 g of candied lemon peel into the mixing bowl and chop for 5 sec./speed 5. Then transfer to a bowl.

Toast Hazelnuts

Lightly toast 100 g of chopped hazelnuts in a pan without fat and set aside.

Heat milk, honey and butter

Put 125 ml of milk, 100 g of honey and 60 g of butter in the mixing bowl and heat for 5 min./90°C/speed 2.

Add fruits and nuts

Thermomix® Setting

Add the chopped glacé cherries, candied orange peel and candied lemon peel, the toasted hazelnuts and 100 g of almond slivers to the mixing bowl and stir for 20 sec./reverse/speed 2.

Cool and shape

Let the mixture cool slightly. Preheat the oven to 175 °C top/bottom heat. Use 2 teaspoons to place small heaps on a baking sheet lined with baking paper and press down slightly.

Baking

Bake in the preheated oven for approx. 12-15 minutes. Then let cool.

Melt the couverture

Put 150 g of dark chocolate couverture in pieces into the mixing bowl and melt for 4 min./50°C/speed 2.

Coat Florentines with chocolate

Using 2 forks, dip the underside of the Florentines in the melted chocolate, place on baking paper with the front side down and let dry.
