Description

This carrot cake is a true comfort food, perfect for breakfast or a snack. Its soft texture and cinnamon scent make it irresistible. Preparing it is very simple, also thanks to our faithful Thermomix®. The grated carrots give a sweet taste and a moisture that melts in the mouth. I often prepare it for my grandchildren's birthdays, always with great success. A tip? Add a light icing sugar glaze for an extra touch! Ideal to enjoy with a cup of hot tea on cold autumn days.

Ingredients (11 ingredients)

  • 200 g Carrots
  • 200 g Flour
  • 3 piece Medium eggs
  • 150 g Sugar
  • 80 ml Seed oil
  • 80 ml Whole milk
  • 1 tsp Cinnamon
  • 1 packet Baking powder
  • 1 tsp Almond flavoring
  • 1 pinch Salt
  • 1 q.b. Icing sugar

Preparation (7 steps)

Grated carrots

200g of peeled carrots cut into large pieces in the bowl. Close the lid and chop for 5 Sec./Stufe 5. Transfer the chopped carrots to a bowl and squeeze them well to eliminate excess liquid.

Eggs and sugar

Thermomix® Setting
3 min/Speed 4

In the clean bowl, insert 3 medium eggs and 150g of sugar. Whisk for 3 Min./Stufe 4.

Addition of liquids

Thermomix® Setting
20 Sec./Speed 3

Add 80ml of whole milk, 80ml of seed oil and 1 teaspoon of almond flavoring. Mix for 20 Sec./Stufe 3.

Dry ingredients

30 Sec./Speed 4

Add 200g of flour, 1 sachet of baking powder and 1 teaspoon of cinnamon to the bowl. Mix for 30 Sec./Stufe 4.

Carrots and salt

Thermomix® Setting
20 Sec./Speed 2/Linkslauf Reverse

Add the squeezed carrots and a pinch of salt. Mix gently with the reverse function for 20 Sec./Stufe 2/Linkslauf.

Baking in the oven

Transfer the mixture into a 22 cm greased and floured mold. Bake in a static preheated oven at 180°C for 40 minutes. Do the toothpick test to check if it is cooked.

Decoration

Let the cake cool slightly and sprinkle with icing sugar.
