Description

This recipe for chicken livers with onions in Sherry is a traditional Spanish dish that evokes the flavors of tapas bars. The livers, tender and juicy, are cooked in a rich and aromatic sauce of caramelized onion, Sherry wine and brandy. It is a simple but flavorful dish, perfect for a quick and comforting meal. I prepare it often because it is economical and everyone at home likes it. It can be served with chips or white rice for a complete meal. A classic that never fails!

Ingredients (9 ingredients)

  • 600 g Chicken livers
  • 2 clove Garlic
  • 4 piece Onion
  • 75 ml Brandy
  • 150 ml Pale dry sherry wine
  • Chicken broth
  • Extra virgin olive oil
  • Salt
  • Ground black pepper

Preparation (6 steps)

Sliced garlics and julienned onion

Peel and thinly slice 2 cloves of garlic. Peel and cut 4 onions into julienne strips. Introduce the garlics into the bowl and chop 3 Sec./Speed 7. Remove and reserve.

Sauté the onion

60 min/194°F/Velocidad 1 90

Add extra virgin olive oil to the bowl (enough to cover the bottom). Incorporate the julienned onion and a pinch of salt. Sauté for 60 Min./90°C/Speed 1, stirring with the spatula from time to time.

Sauté the livers

Thermomix® Setting
5 min/Varoma/Velocidad 1 Varoma

Remove the onion from the bowl and reserve. Add a dash of extra virgin olive oil to the bowl. Incorporate 600 g of chicken livers, add salt and pepper to taste and sauté for 5 Min./Varoma/Speed 1.

Add the onion and the wine

5 min/212°F/Velocidad 1 100

Add the reserved onion to the bowl. Pour in 150 ml of pale dry sherry wine and 75 ml of brandy. Cook for 5 Min./100°C/Speed 1, without the measuring cup, so that the alcohol evaporates.

Add the broth and cook

10 min/212°F/Velocidad 1 100

Add chicken broth (enough to cover the livers). Cook for 10 Min./100°C/Speed 1.

Taste and correct with salt and ground black pepper if necessary. Serve hot.
