Description

This fragrant chicken curry is a flavorful and satisfying dish, perfect for a cozy autumn evening. I've been making this curry for years, and it's always a hit with my family. The combination of aromatic spices, tender chicken, and creamy sauce is simply irresistible. It's a great way to use up leftover chicken, and it's also easy to customize to your liking. Feel free to add more vegetables or adjust the spice level to suit your taste. This curry is best served with rice or naan bread.

Ingredients (19 ingredients)

  • 3 tbsp vegetable oil
  • 1 piece medium onion, chopped
  • 3 clove garlic, sliced
  • 1 piece fresh ginger root, grated
  • 1 piece stick cinnamon
  • 3 piece bay leaves
  • 1 tbsp brown sugar
  • 1 tsp coriander seeds
  • 1 tsp fenugreek seeds
  • 6 piece whole cloves
  • 6 piece whole cardamom pods
  • 1 tsp crushed red pepper flakes
  • 10 piece whole black peppercorns
  • 2 pounds skinless, boneless chicken breast halves - diced
  • 3 tbsp curry powder
  • 1.5 cups water
  • 1 tbsp lemon juice
  • salt and pepper
  • 0.5 cup light cream

Preparation (5 steps)

Sauté Aromatics

Add the vegetable oil to a wok and heat over medium heat. Add the chopped onion and cook until lightly browned. Mix in the sliced garlic, grated ginger, cinnamon stick, bay leaves, brown sugar, coriander seeds, fenugreek seeds, whole cloves, whole cardamom pods, crushed red pepper flakes, and whole black peppercorns. Cook and stir for about 3 minutes.

Brown Chicken

Place the diced chicken breast halves in the wok and cook until lightly browned. Mix in the curry powder.

Simmer Curry

Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes. Add more water as necessary to keep the chicken covered.

Final Seasoning

Mix in the lemon juice, season with salt and pepper to taste, and continue cooking for at least 15 minutes.

Add Cream and Serve

Stir in the light cream and remove the cinnamon stick and bay leaves before serving.
