Description

This fruit salad is an explosion of fresh flavors and vibrant colors, perfect for hot summer days. Sweet strawberries, juicy peaches, ripe cherries and tart blueberries combine with crunchy celery and refreshing cucumber. Toasted peanuts add a crunchy and flavorful note, while arugula and marjoram add an aromatic touch. Seasoned with a simple emulsion of extra virgin olive oil, lemon juice and a pinch of salt, this salad is a true pleasure for the palate. A drizzle of balsamic vinegar glaze completes the whole, giving an irresistible sweet and sour contrast. Ideal as a light appetizer or as a fresh and healthy side dish.

Ingredients (13 ingredients)

  • 200 g strawberries
  • 1 piece peaches
  • 100 g cherries
  • 100 g blueberries
  • 1 coste celery
  • 1 cetriolo cucumber
  • 30 g unsalted toasted peanuts
  • arugula
  • marjoram
  • balsamic vinegar glaze
  • extra virgin olive oil
  • 0.5 limoni lemon juice
  • fine salt

Preparation (11 steps)

Preparing the strawberries

Remove the stalk from the strawberries (200 g), divide them in half and then into wedges. Put the strawberries in a large bowl. No Thermomix setting is required in this step.

Preparing the peach

Divide the peach (1 piece) in half, remove the pit and cut it into wedges. Add the peach to the bowl with the strawberries. No Thermomix setting is required in this step.

Preparing the cherries

Pit the cherries (100 g), divide them in half and add them to the rest of the fruit in the bowl. No Thermomix setting is required in this step.

Adding the blueberries

Add the whole blueberries (100 g) to the bowl with the fruit. No Thermomix setting is required in this step.

Slicing the celery

Finely slice the celery stalk (1 stalk) and add it to the rest of the ingredients in the bowl. No Thermomix setting is required in this step.

Preparing the cucumber

Peel the cucumber (1 cucumber), cut it into thin slices and put it in the bowl with the other ingredients. No Thermomix setting is required in this step.

Adding the final ingredients

Add the unsalted toasted peanuts (30 g) and a few sprigs of arugula to the bowl. No Thermomix setting is required in this step.

Preparing the dressing

In a small jar, pour the extra virgin olive oil (to taste), a pinch of fine salt (to taste) and the juice of half a lemon. No Thermomix setting is required in this step.

Emulsifying the dressing

Close the jar tightly and shake vigorously for 20 Sek./Stufe 4 until a homogeneous emulsion is obtained.

Seasoning the salad

Pour the dressing over the salad and mix gently with a spatula to distribute all the flavors well. No Thermomix setting is required in this step.

Serving

Serve the fruit salad completing with some fresh marjoram leaves and a drizzle of balsamic vinegar glaze. No Thermomix setting is required in this step.
