Description

This avocado and cucumber salad is an explosion of freshness, perfect for hot summer days. The creaminess of the avocado perfectly matches the crunchiness of the cucumber and the sweetness of the tomatoes. The plain yogurt adds a touch of acidity that balances everything. I often prepare it when I have little time but want something tasty and healthy. It is an excellent vegetarian option, rich in good fats and vitamins. Try it as an appetizer or as a light side dish for a quick lunch. A tip? Add a few fresh mint leaves for an extra touch of flavor!

Ingredients (8 ingredients)

  • 1 piece avocado
  • 1 container plain yogurt
  • 2 piece tomatoes
  • 1 piece spring onion
  • 1 piece cucumber
  • olive oil
  • salt
  • lemon

Preparation (4 steps)

Prepare avocado

The avocado is cut in half lengthwise, peeled and sprinkled with lemon juice. Half of the avocado is set aside. The other half is cut into pieces.

Prepare vegetables

The cucumber is washed, peeled and cut into rounds. The tomatoes are washed and cut into pieces. The spring onion is peeled and cut into thin slices. All ingredients are placed in a bowl with half of the avocado cut into pieces.

Prepare avocado cream

Thermomix® Setting
20 sec/Speed 8

The other half of the avocado, the plain yogurt, salt and olive oil are placed in the Thermomix bowl. Blend for 20 Sec./Stage 8 until you get a thick and velvety cream.

Arrange salad

The washed and drained lamb's lettuce is placed in a salad bowl. Add the vegetables and avocado pieces. Season with the freshly prepared avocado and yogurt sauce. Mix gently and serve immediately.
