Description

This couscous salad is an absolute summer hit! The combination of the loose couscous, fresh vegetables and mint is simply unbeatable. I especially like to make it when it's warm outside and I need something light and refreshing. The preparation is super easy and quick, so it is also perfect for a spontaneous lunch or as a side dish for grilling. With its Mediterranean touch, it brings a holiday feeling to the plate. A dash of lemon juice provides the necessary freshness. Simply delicious!

Ingredients (12 ingredients)

  • 50 g Instant couscous
  • 100 ml Vegetable broth
  • 0.5 piece Cucumber(s)
  • 1 piece Tomato(es)
  • 3 piece Spring onion(s)
  • 0.5 bunch Mint
  • 0.5 bunch Parsley smooth
  • 1 tbsp Lemon juice alternatively lime juice
  • 2 tbsp Olive oil
  • 1 Prise(n) Sugar
  • Salt
  • Pepper

Preparation (8 steps)

Heat vegetable broth

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 100 ml vegetable broth to the mixing bowl and heat for 3 min./100°C/speed 1.

Let the couscous soak

Place 50 g instant couscous in a bowl and pour the hot vegetable broth from the mixing bowl over it. Cover and let soak for about 5 minutes.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Add 1 tbsp lemon juice, 2 tbsp olive oil, 1 pinch of sugar, salt and pepper as needed to the mixing bowl and stir for 10 sec./speed 3.

Prepare cucumber

Peel, halve, core and dice 0.5 cucumber. Add the diced cucumber to the mixing bowl with the dressing.

Prepare tomato and spring onions

Dice 1 tomato and cut 3 spring onions into thin rings. Add tomatoes and spring onions to the mixing bowl.

Chop herbs

Thermomix® Setting
3 sec/Speed 5

Add 0.5 bunch of mint and 0.5 bunch of parsley (smooth) to the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula and repeat if necessary.

Mix salad

Thermomix® Setting
10 sec/Linkslauf/Speed 2 Reverse

Add the soaked couscous and chopped herbs to the mixing bowl and mix for 10 sec./reverse/speed 2.

Let the salad sit

Let the couscous salad sit for about a quarter of an hour, season again and serve.
