Description

This fresh salad is an explosion of flavor and color, perfect for hot days. The combination of juicy tomato, crunchy cucumber and fresh lettuce is perfectly complemented by a creamy dressing of natural yogurt and aromatic herbs. I prepare it often in summer, because it is light, refreshing and very easy to make. In addition, it can be adapted to everyone's tastes, adding other vegetables or even a little fresh cheese. A healthy and delicious dish that always triumphs!

  • lettuce
  • Natural unsweetened Yogurt
  • 1 cucharada chopped parsley
  • Dijon mustard
  • Salt
  • pepper
  • Olive oil
  • 1 cucharada chopped mint
  • 3 piece ripe tomatoes

Preparation of the vegetables

Wash 3 ripe tomatoes, remove the seeds and the skin. Cut into cubes and reserve. Wash 1 cucumber, remove some strips of skin, remove all the seeds and chop into cubes. Wash and drain some lettuce leaves.

In the Thermomix bowl, add 1 natural unsweetened yogurt, 1 tablespoon of chopped parsley, Dijon mustard to taste, salt, pepper, olive oil to taste and 1 tablespoon of chopped mint. Mix for 10 seconds at speed 4.

Mix and serve

Put the lettuce leaves in a bowl, add the tomatoes and cucumber. Pour the dressing over the salad and mix everything carefully. Place in the center of the lettuce and serve immediately.

This recipe is a modernized version of those salads, adapted to the convenience of the Thermomix, but maintaining the essence of fresh, quality ingredients. The tomato, juicy and sweet, is the base of this salad. I recommend using ripe but firm tomatoes, preferably of the "Raf" or "Huevo de Toro" variety if available, as they have a more intense flavor. The cucumber, with its crunchy texture and refreshing flavor, provides a perfect counterpoint to the sweetness of the tomato. It is important to remove the seeds from the cucumber, as they can bitter the salad. The lettuce, for its part, adds volume and a green and fresh base. I use a mixture of lettuces, such as romaine, oak leaf and iceberg, to obtain different textures and flavors. The dressing is the key to this salad. Natural unsweetened yogurt gives it creaminess and an acidic touch that balances the flavors. Parsley and mint, finely chopped, provide a fresh and herbal aroma. Dijon mustard adds a spicy touch and enhances the flavors. The Thermomix facilitates the preparation of the dressing, as it emulsifies all the ingredients perfectly in a matter of seconds.
