  • 1 piece thick salmon loin
  • 1 ramojo coriander
  • 3 piece jalapeños
  • 3 piece snack cucumbers
  • 3 piece limes (juice)
  • 1 a gusto salt
  • 1 a gusto cold water
  • 1 a gusto avocado (to accompany)
  • 1 a gusto cucumber (to accompany)
  • 1 a gusto red onion (to accompany)

Preparation of the gazpacho

Place a bunch of coriander, 3 jalapeños, 3 snack cucumbers, the juice of 3 limes, salt to taste and cold water in the Thermomix glass. Crush everything for 30 seconds at speed 10 until obtaining a liquid and homogeneous sauce. Verify that there are no lumps and, if necessary, crush for a few more seconds.

Preparation of the salmon

Cut a thick salmon loin into fillets, making sure to remove the skin and bones. Reserve the fillets.

Assembly of the dish

Serve the jalapeño gazpacho on the bottom of the plate. Place the salmon fillets on top of the gazpacho. Accompany with cucumber slices, avocado, red onion or chillies, according to your preference.
