Description

With the Thermomix®, these fried rice balls with mozzarella are guaranteed to succeed. Risotto rice, parmesan and mozzarella are the main ingredients for this Italian finger food. Preparation takes about 120 minutes, with an active working time of 45 minutes. The recipe yields 12 servings and is ideal as a vegetarian snack, appetizer or for a festive buffet.

  • 250 g Risotto rice
  • 80 g grated Parmesan
  • 2 EL Butter
  • 125 g Mini mozzarella balls
  • 50 g Flour
  • 80 g Panko
  • 1 Stück Egg
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • Vegetable oil for frying

Preparation (6 steps)

Cook rice

Thermomix® Setting
22 min/212°F/Speed 4 100

Cook 250 g risotto rice according to package directions in the Thermomix simmering basket. Insert the simmering basket, add 1 liter of water to the mixing bowl and weigh in the rice. Cook for 22 min./100°C/speed 4. Remove the simmering basket with the spatula and let the rice cool.

Prepare rice

Place cooked rice in a large bowl. Add 80 g grated Parmesan and 2 tbsp butter. Season with salt and pepper and mix well.

Shape rice balls

With slightly damp hands, form about 70-80 g of rice around a 125 g mini mozzarella ball to create 12 rice balls. Store the formed balls on a plate or platter in between.

Prepare breading station

Place 50 g flour and 80 g panko (or breadcrumbs) each on a separate plate. Whisk 1 egg in a bowl.

Bread Arancini

First turn the rice balls in the flour, then dip them in the beaten egg and then roll them in the panko (or breadcrumbs) until they are completely covered.

Fry Arancini

Heat vegetable oil in a small saucepan to approx. 180°C. Fry the arancini in batches for approx. 3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
