Description

This salad is a real hit! The combination of crunchy romaine lettuce, sweet cranberries, salty cashews and spicy Parmesan is simply unbeatable. The dressing with garlic, mustard and honey rounds everything off perfectly. I like to make this salad when I need something quick or when I have guests. It's super easy to prepare and tastes delicious. Perfect for the barbecue season or as a light meal in between. An absolute favorite recipe!

Ingredients (8 ingredients)

  • 3 piece Lettuce heart(s) of romaine lettuce
  • 200 g Cashews
  • 125 g Cranberries
  • 75 g Parmesan grated
  • 1 clove Garlic clove(s) crushed
  • Vinegar oil
  • 1 tsp Mustard
  • 1 tsp Honey

Preparation (4 steps)

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Add 1 clove of garlic to the mixing bowl and chop for 3 sec./speed 7. Scrape down the sides with the spatula.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Add vinegar, oil, 1 tsp mustard and 1 tsp honey to the mixing bowl along with the chopped garlic and mix for 10 sec./speed 3.

Prepare salad

Chop, wash and spin dry 3 lettuce hearts from the romaine lettuce. Place in a large bowl.

Mix salad

Add 200 g cashews, 125 g cranberries and 75 g grated Parmesan to the salad in the bowl. Pour the prepared dressing over it and mix everything well.
