Description

This frozen yogurt berry terrine is a real eye-catcher and tastes wonderfully refreshing! I especially like to make it in the summer when it's hot outside. The preparation is super easy and can be prepared perfectly, as the terrine has to freeze overnight. The creamy yogurt in combination with the fruity berries is simply unbeatable. A great dessert for birthdays or just when you want to enjoy something special. It is also vegetarian and low in lactose (with lactose-free yogurt)!

Ingredients (7 ingredients)

  • 500 g Natural yogurt
  • 120 g Sugar
  • 1 Pck. Vanilla sugar
  • 2 container Whipping cream
  • 1 Spritzer Lemon juice
  • 500 g Berries frozen or fresh (e.g. berry mix, raspberries, strawberries)
  • Sugar

Preparation (7 steps)

Prepare yogurt mixture

Thermomix® Setting
20 sec/Speed 3

Add 500 g natural yogurt, 120 g sugar, 1 packet of vanilla sugar and 1 splash of lemon juice to the mixing bowl and stir for 20 sec./speed 3.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Insert the butterfly. Add 2 cups of whipping cream to the mixing bowl and whip for 2 min./speed 3.5 until stiff. Remove butterfly.

Fold in whipped cream

Carefully fold the whipped cream into the yogurt mixture with a spatula.

Let drain

Line a sieve with a clean kitchen towel and place on a larger bowl. Fill the yogurt mixture into the sieve and refrigerate overnight (at least 24 hours).

Puree fruits

Place half of the 500 g berries (frozen or fresh) in the mixing bowl and puree for 20 sec./speed 8.

Mix fruits

Mix the berry puree with the remaining whole berries and sweeten with sugar to taste.

Shape terrine

Turn the drained yogurt mixture out of the sieve onto a plate and arrange and decorate with the fruits.

This frozen yogurt berry terrine is a dessert that has a tradition in our family. My grandma always made it for special occasions, but without Thermomix®. I have modernized her recipe a little and adapted it to the Thermomix® to simplify the preparation. The terrine reminds me of carefree summer days and family celebrations. The natural yogurt forms the basis for the creamy texture. It should be of good quality, because its taste shapes the entire dessert. The sugar provides the necessary sweetness, which is further enhanced by the vanilla sugar. A dash of lemon juice brings a fine acidity into play, which underlines the yogurt taste and balances the sweetness. The whipped cream makes the yogurt mixture particularly light and creamy. The berries, whether fresh or frozen, bring a fruity note and a beautiful color to the terrine. When preparing in the Thermomix®, it is important that the mixing bowl is clean and dry before the cream is whipped. The butterfly attachment ensures that the cream becomes nice and stiff. Be careful not to beat the cream for too long, otherwise it may become buttery. When folding the cream into the yogurt mixture, be careful to maintain the lightness. Draining the yogurt mixture is an important step to ensure a firm consistency of the terrine. The longer the mixture drains, the firmer the terrine becomes. For a low-lactose version, lactose-free yogurt can be used. If you like it vegan, you can use plant-based yogurt and plant-based cream. Instead of vanilla sugar, the pulp of a vanilla pod can also be used. For a special touch, grated lemon or orange zest can also be added to the yogurt mixture. A touch of cardamom or cinnamon also goes perfectly with the berries. The frozen yogurt berry terrine can be served pure or decorated with fresh berries, mint leaves or a chocolate sauce. Roasted almonds or hazelnuts also go well with it. A crispy biscuit or a piece of sponge cake is suitable as a side dish. The terrine can be prepared well, as it has to freeze overnight. It can be stored in the freezer for several days. Before serving, it should thaw slightly so that it is easier to cut.
