Description

This creamy red cabbage and potato soup with nut brittle, prepared in the Thermomix®, is a vegetarian and gluten-free dish with red cabbage, potatoes, onions and garlic as the main ingredients. Preparation takes about 60 minutes and yields 4 servings. The soup is suitable as a hearty starter or warming main course, ideal for autumn and Christmas. It can be prepared well in advance and is also possible in a lactose-free version.

  • 1 klein Red cabbage
  • 400 g Potatoes
  • 1 Stück Red onion
  • 1 Zehe Garlic
  • 1 EL Oil
  • 1.25 l Vegetable broth
  • 200 g Crème fraîche
  • 2 EL Milk
  • 2 EL Walnut kernels
  • 2 EL Pistachio kernels
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 EL Honey
  • Lemon juice

Chop onion and garlic

Place 1 peeled red onion in the mixing bowl and chop for 3 sec./speed 5. Add 1 clove of garlic and chop for 3 sec./speed 7. Use the spatula to scrape everything down from the edge.

Sauté onion and garlic

Add 1 tbsp oil and sauté for 3 min./120°C/speed 1.

Prepare red cabbage and potatoes

Clean, wash and finely slice 1 small red cabbage. Peel and dice 400 g potatoes.

Add red cabbage and potatoes and sauté

Thermomix® Setting

Add the sliced red cabbage and diced potatoes to the mixing bowl and sauté for 3 min./120°C/speed 1.

Deglaze with vegetable broth and cook

Thermomix® Setting

Pour 1.25 l vegetable broth (gluten-free if necessary) into the mixing bowl and cook for 20 min./100°C/speed 1.

Stir crème fraîche and milk

Stir 200 g crème fraîche (lactose-free if necessary) and 2 tbsp milk (lactose-free if necessary) until smooth in a bowl. Set aside.

Roast and chop nuts

Roast 2 tbsp walnut kernels and 2 tbsp pistachio kernels in a pan without fat, let cool briefly and chop coarsely.

Purée soup

Purée the soup in the mixing bowl for 30 sec./speed 8-10, slowly increasing the speed.

Season soup

5 sec/Speed 4

Season the puréed soup to taste with salt, pepper, 1 tbsp honey and lemon juice and stir for a further 5 sec./speed 4 if necessary.

Serve

Fill the soup into bowls, garnish with a dollop of crème fraîche and sprinkle with the chopped nuts.
