Description

Strudli with sauerkraut is a hearty main course from the Thermomix® with potatoes, sauerkraut and a dough made from milk, flour and yeast. Preparation takes about 90 minutes and yields 5 servings. Ideal as a filling home-style meal for the whole family. The recipe is easy to prepare and offers a savory meal.

Ingredients (18 ingredients)

  • 300 g Milk
  • 1 TL Sugar
  • 1 Pck. Yeast
  • 600 g Flour
  • 1 TL Salt
  • 20 g Oil
  • 100 g Liquid butter
  • 750 g Potatoes (bite-sized pieces)
  • 1 Stück Onion
  • 2 Stück Carrots (in pieces)
  • 1 Stück Bell pepper (in small strips)
  • 20 g Oil
  • 500 g Pork neck (bite-sized pieces)
  • 1 EL Vegetable broth
  • 1 Stück Bay leaf
  • 600 g Water
  • 500 g Sauerkraut (lightly squeezed)
  • 1 EL Parsley

Prepare yeast

Put milk, sugar and yeast in the mixing bowl and stir for 2.5 min./37°C/speed 2.

Knead dough

Add flour and salt and knead for 2.5 min./kneading setting to form a dough.

Knead dough until finished

Add oil and knead for 1 min./kneading setting until finished.

Let the dough rest

Place the dough in a lightly floured bowl and let it rise covered for 30 minutes.

Shape strudli

Put some oil on the work surface and roll out the dough to about 1 cm thick. Brush with butter and then loosely roll up from the long side and cut into 4 cm wide strips. Distribute the strudli in the lightly greased Varoma container (Attention: do not place too close to each other, as they will rise and possibly place two strudli on the potato).

Chop vegetables

Put onion and carrots in the mixing bowl and chop for 5 sec./speed 5.

Sauté vegetables

Add bell pepper and oil and sauté for 5 min./Varoma/speed 1.

Cook meat and vegetables

Add pork neck and cook for 5 min./Varoma/reverse/speed 1.

Steam cook

Add vegetable broth, bay leaf and water to the mixing bowl. Place the Varoma container with the strudli, the insert with the potatoes on top and close the Varoma - cook for 35 min./Varoma/reverse/speed 1.

Add sauerkraut

After 20 minutes, add the sauerkraut to the mixing bowl and stir in with the spatula.

Keep the Varoma contents warm and stir the parsley into the mixing bowl.
