Description

These red currant cookies are a delicious pastry for the winter season. The shortcrust pastry is prepared in the Thermomix® and filled with red currant jam. The cookies are ideal for Christmas and can be stored well in a cookie tin. The preparation time is approx. 105 minutes.

Ingredients (8 ingredients)

  • 300 g Spelt flour
  • 90 g Sugar
  • 1 P Vanilla sugar
  • 1 Prise Salt
  • 130 g Butter
  • 1 Stück Egg
  • Red currant jam
  • Powdered sugar for dusting

Prepare the dough

Thermomix® Setting

Put 300 g spelt flour, 90 g sugar, 1 packet of vanilla sugar, 1 pinch of salt, 130 g butter and 1 egg into the mixing bowl and process for 2 min./kneading setting to a smooth shortcrust pastry.

Chill the dough

Wrap the shortcrust pastry in cling film and refrigerate for 1 hour.

Cut out cookies

Remove the dough from the refrigerator and roll out on a floured work surface. Cut out cookies (1x base, 1x lid with hole).

Bake the cookies

Place the cut out cookies on a baking sheet lined with baking paper and bake for 10 minutes at 180°C top and bottom heat.

Fill and sprinkle cookies

Let the baked cookies cool down. Put a dab of red currant jam in the middle of the "base", put the "lid" on top, press down and sprinkle the cookie with powdered sugar.
