Description
These pumpkin seed cookies are a hearty pastry, ideal for autumn. With pumpkin seeds and pumpkin seed oil, they are a special treat. Preparation takes about 40 minutes and yields a good amount of cookies to share. Perfect for an autumnal coffee table or as a small snack in between.
Ingredients (6 ingredients)

250 g Flour

150 g Butter

100 g Sugar

200 g Grated pumpkin seeds

2 EL Pumpkin seed oil

2 Stück Egg yolk
Preparation (4 steps)
Prepare the dough
Put all ingredients into the mixing bowl and process for 2 min./kneading stage to form a dough.
Let the dough rest
Wrap the dough in cling film and let it rest in the refrigerator for 20 minutes.
Fill cookies
Roll out the dough, cut out cookies, fill with apricot jam and put together.
Baking
Place the filled cookies on a baking sheet lined with baking paper and bake in a preheated oven at 180°C top/bottom heat for approx. 15-20 minutes.
