Description

This Easter cake is not only an eye-catcher, but also a delicious surprise! I bake it every year for Easter and it's always a hit. The dark chocolate dough harmonizes perfectly with the light vanilla dough, and the little rabbits inside are simply enchanting. The preparation is a bit more complex, but it's definitely worth it. The cake is ideal for the Easter coffee table and can be prepared well in advance. With fondant and marzipan carrots, it becomes a real work of art. A festive cake that is guaranteed to inspire!

Ingredients (12 ingredients)

  • 600 g Margarine
  • 510 g Sugar
  • 8 piece Eggs
  • 750 g Flour
  • 3 Pck. Baking powder
  • 180 g Milk
  • 60 g Baking cocoa
  • 1.5 tsp Vanilla sugar
  • 1 Fläschchen Rum flavoring
  • Fondant white cake decoration
  • Marzipan carrots
  • Sugar icing pink

Preparation (6 steps)

Prepare dark dough

Thermomix® Setting
45 sec/Speed 3

Put 300 g margarine into the mixing bowl and stir until creamy for 45 sec./speed 3. Add 270 g sugar and mix for 30 sec./speed 3. Add 4 eggs and stir for 45 sec./speed 5. Add 375 g flour, 1.5 pack baking powder and 105 g milk and stir in for 30 sec./speed 5. Add 60 g baking cocoa and mix with the help of the spatula for 15 sec./speed 5. Stir again with the spatula.

Bake dark dough

Put the dark dough in a large greased loaf pan and bake in the preheated oven at 180 °C convection for approx. 65 - 75 min. Do a stick test.

Cool dark cake and cut out rabbits

Let the dark cake cool very well. Cut into thick slices and cut out with a rabbit shape. Save cake scraps.

Prepare light dough

Thermomix® Setting
45 sec/Speed 3

Put 300 g margarine, 240 g sugar, 1.5 tsp vanilla sugar and 1 bottle of rum flavoring into the mixing bowl. Add 4 eggs. Add 375 g flour, 1.5 pack baking powder and 75 g milk and prepare a batter as for the dark dough: stir until creamy for 45 sec./speed 3, stir for 30 sec./speed 3, stir for 45 sec./speed 5, stir in for 30 sec./speed 5.

Layer and bake cake

Grease the cleaned loaf pan. Pour approx. 2 cm of the light dough into the pan and smooth it out. Place the cut out rabbits close together on top. Carefully pour the remaining light dough around the rabbits, the rabbits should be completely covered. Bake the cake in the preheated oven at 180 °C convection for approx. 60 min. Do a stick test.

Decorate cake

Melt chocolate coating (in a water bath or in the microwave). Glaze the cake with it. Model a rabbit body from the fondant, paint the paws pink. Crumble the remaining cake and place it around the rabbit together with the marzipan carrots.
