Description

This curd cheese zebra cake is a real eye-catcher on any coffee table! I particularly like to bake it when visitors come, as it not only tastes delicious, but also looks good. Thanks to the high proportion of curd cheese, it is nice and juicy and the chocolate stripes provide that special something. And the best thing is: it is gluten-free and lactose-free, so people with intolerances can also enjoy it. Preparation is super easy and quick with the Thermomix®. An absolute favorite recipe that I always enjoy baking!

Ingredients (10 ingredients)

  • 250 g gluten-free chocolate cookies
  • 100 g Margarine
  • 1 piece Vanilla bean
  • 2 piece Eggs (M)
  • 150 g Sugar
  • 600 g Low-fat curd cheese
  • 200 g Whipping cream
  • 1 Pck. Custard powder vanilla (gluten-free)
  • 200 g Whole milk chocolate
  • 60 ml low-fat milk lactose-free

Preparation (7 steps)

Prepare cookie base

Thermomix® Setting
10 sec/Speed 8, 3 min/122°F/Speed 2 50

Put 250 g of gluten-free, lactose-free chocolate cookies in the mixing bowl and chop for 10 sec./level 8. Then add 100 g of margarine and melt for 3 min./50°C/level 2. Spread the biscuit-margarine mixture on the bottom of a springform pan (26 cm) lined with baking paper, press down well and place in the refrigerator for 30 minutes.

Extract vanilla pulp

Halve a vanilla bean lengthwise and scrape out the pulp. Set aside.

Prepare curd cheese mixture

Thermomix® Setting
2 min/Speed 4, 20 sec/Speed 3

Put 2 eggs, 150 g sugar and the vanilla pulp in the mixing bowl and beat until frothy for 2 min./level 4. Add 600 g low-fat curd cheese, 200 g whipping cream and 1 packet of gluten-free vanilla custard powder and stir for 20 sec./level 3. Halve the curd cheese mixture and divide into two bowls.

Melt chocolate

Thermomix® Setting
10 sec/Speed 8, 3 min/122°F/Speed 2, 10 sec/Speed 3 50

Put 200 g of whole milk chocolate in pieces in the mixing bowl and chop for 10 sec./level 8. Then melt for 3 min./50°C/level 2. Add 60 ml of low-fat milk and stir for 10 sec./level 3.

Stir in chocolate mixture

Thermomix® Setting
10 sec/Speed 3

Add the melted chocolate mixture to one half of the curd cheese mixture and stir for 10 sec./level 3.

Layer cake

Pour the light and dark curd cheese mixture alternately into the center of the springform pan onto the cookie base.

Bake cake

Bake the cake in a preheated oven at 160 °C top/bottom heat (140 °C convection) for 50-60 minutes. Then let it cool down.
