Description

These sweet potato and zucchini treats are a delightful way to sneak in some extra veggies! I've been making these for years, and they're always a hit. The combination of sweet potato and zucchini creates a moist and tender texture, while the cinnamon and nutmeg add a warm, comforting flavor. They're perfect for a quick breakfast, a healthy snack, or even a light dessert. Plus, they're vegetarian-friendly! Feel free to add some chopped nuts or chocolate chips for an extra touch of indulgence. They are best enjoyed warm from the oven.

Ingredients (11 ingredients)

  • cooking spray
  • 1 piece sweet potato
  • 2 cups biscuit mix
  • 1.25 cups brown sugar
  • 1 cups milk
  • 1 piece zucchini, grated
  • 2 piece eggs
  • 2 tablespoons margarine
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon vanilla extract
  • 1 pinch ground nutmeg

Preparation (5 steps)

Preheat Oven

Preheat oven to 375 degrees F (190 degrees C). Spray muffin tins with cooking spray. This step is done outside of the Thermomix to prepare for baking.

Cook Sweet Potato

Place the sweet potato in the microwave and cook until tender, about 6 minutes. Peel and dice the sweet potato. Transfer the diced sweet potato to a large bowl. This step is done outside of the Thermomix to prepare the sweet potato.

Combine Ingredients

Add 2 cups biscuit mix, 1 1/4 cups brown sugar, 1 cup milk, 1 grated zucchini, 2 eggs, 2 tablespoons margarine, 2 teaspoons ground cinnamon, 1/2 teaspoon vanilla extract, and 1 pinch ground nutmeg to the bowl with the sweet potato. Mix well until combined. This step is done outside of the Thermomix to combine the ingredients.

Fill Muffin Tins

Spoon 1/3 cup batter into each muffin cup. This step is done outside of the Thermomix to prepare the muffins for baking.

Bake Muffins

Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 25 to 30 minutes. This step is done outside of the Thermomix to bake the muffins.
