Description

This Andalusian gazpacho is a real treat on hot days! I have been making it for years and it is always well received. The fresh tomatoes, cucumbers, onions and peppers give it an incomparable taste. A dash of vinegar and a good dash of olive oil round it off. It is not only refreshing, but also incredibly healthy and full of vitamins. Perfect as an appetizer or light snack. It tastes best well chilled, possibly with a few ice cubes. If you like, you can garnish it with chopped onions, diced ham and croutons. An absolute must for the summer!

Ingredients (8 ingredients)

  • 4 piece large very red tomatoes
  • 2 piece cucumbers
  • 1 piece spring onion
  • 0.5 piece red pepper
  • 1 clove garlic
  • 1 poco salt
  • 1 chorro olive oil
  • 1 poco Modena vinegar

Preparation of the ingredients

Wash, peel and roughly chop the 4 large, red tomatoes, 2 cucumbers, 1 spring onion and 1/2 red pepper. Place the prepared ingredients into the mixing bowl.

Chop and mix ingredients

Add 1 clove of garlic, some salt, a dash of olive oil and a dash of vinegar to the prepared ingredients in the mixing bowl. Chop and mix everything for 30 sec./level 8 until a homogeneous mass is formed.

Strain gazpacho

Pass the gazpacho through a fine sieve or muslin cloth into a large bowl to remove any solids and achieve a fine consistency.

Chill and Serve

Place the strained gazpacho in a bowl, cover with cling film and refrigerate for at least 1 hour. Optionally add ice cubes before serving to make the gazpacho even colder.

Optional Garnish

Optionally chop some spring onion, prepare diced ham and roast croutons before serving. Put everything over the gazpacho.
