Description

This herb roasted chicken, served on a bed of melting potatoes, is a quintessential family dish. I love preparing this recipe, especially in the autumn, when the herbs in my garden are still fragrant. The simplicity of the preparation with the Thermomix® saves time, while guaranteeing a tasty result. The potatoes, infused with the aromas of chicken and herbs, become incredibly tender. It's a comforting dish, perfect for a Sunday lunch or a festive dinner. Feel free to add other seasonal vegetables, such as carrots or parsnips, for an even more gourmet version!

Ingredients (9 ingredients)

  • 1 kg chicken
  • 900 g potatoes
  • 2 piece onions (large)
  • 7 clove garlic
  • to taste Thyme with rosemary (powdered or better in sprigs)
  • to taste Rosemary
  • to taste Olive oil
  • to taste Salt or fine salt
  • to taste Pepper

Preparation (5 steps)

Preheat the oven

Preheat the oven to 180°C (thermostat 6/7) for at least 10 minutes. This step is done without the Thermomix®.

Garlic preparation

Peel the 7 cloves of garlic, remove the germ and place them in the Thermomix® bowl. Chop the garlic for 3 Sek./Stufe 7.

Onion preparation

Peel the 2 large onions, remove the germ, roughly cut them into 4 and place them in the Thermomix® bowl. Chop the onions for 3 Sek./Stufe 5.

Potato preparation

Peel the 900 g of potatoes, cut them into dice and set aside. This step is done without the Thermomix®.

Assembly and cooking

Take a gratin dish. Place the diced potatoes at the bottom of the dish. Add the chopped onions and garlic from the Thermomix®. Place the chicken (1 kg) on the bed of potatoes. Brush the chicken with olive oil all over with a kitchen brush. Sprinkle with thyme and rosemary, salt and pepper. Add 5 tablespoons of olive oil over the chicken and vegetables. Mix the vegetables to coat them harmoniously with olive oil. Bake the dish in the preheated oven for 2 hours of cooking. After one hour, turn the chicken and vegetables over, leaving the vegetables uncovered. This step is done without the Thermomix®.
