Ingredients (17 ingredients)

  • 200 g Marzipan raw paste
  • 50 g Raisins
  • 3 EL Rum
  • 50 g Slivered almonds
  • 250 g Wheat flour Type 405
  • 175 g Sugar
  • 2 Pck. Vanilla sugar
  • 1 Prise(n) Salt
  • 1 Msp. Baking powder
  • 4 Stück Eggs (size M)
  • 175 g Butter
  • 6 Stück Red apples (à 125 g)
  • 500 g Low-fat quark
  • 100 ml Whipping cream
  • 1 Pck. Vanilla pudding powder
  • 200 g Apricot jam
  • 1 EL Powdered sugar

Preparation (13 steps)

Grate marzipan and prepare raisins

Thermomix® Setting

Roughly chop 200 g of marzipan raw paste into pieces and place in the mixing bowl, then chop for 5 sec/speed 5. Transfer to a bowl. Wash and pat dry 50 g of raisins. Pour 3 tbsp of rum over the raisins and let them soak.

Roast almonds

Roast 50 g of slivered almonds in a pan without fat until golden brown. Remove and let cool.

Prepare the dough

2 min/Kneading speed

Place 250 g wheat flour Type 405, 75 g sugar, 1 packet vanilla sugar, 1 pinch of salt, 1 knife tip of baking powder, 1 egg (size M) and 125 g butter in flakes, and 50 g chopped marzipan in the mixing bowl and knead for 2 min/knead setting to a smooth dough.

Chill the dough

Wrap the dough in cling film and chill, covered, for about 30 minutes.

Prepare and fill the apples

Wash, pat dry 6 red apples (à 125 g) and remove the core with an apple corer. Knead together 150 g of chopped marzipan with the rum raisins and the roasted slivered almonds. Fill the marzipan mixture into the apples.

Prepare the quark mixture

2 min/Speed 3

Place 50 g butter, 1 packet vanilla sugar and 100 g sugar in the mixing bowl and mix for 2 min/speed 3 until creamy. Add 3 eggs (size M) one after the other and mix for 20 sec/speed 3 each. Add 500 g low-fat quark, 100 ml whipping cream and 1 packet vanilla pudding powder and mix for 30 sec/speed 3.

Stir in the eggs

Add 3 eggs one after the other and mix for 20 sec/speed 3 each.

Stir in the quark mixture

Thermomix® Setting
30 sec/Speed 3

Add 500 g low-fat quark, 100 ml whipping cream and 1 packet vanilla pudding powder and mix for 30 sec/speed 3.

Roll out dough and place in pan

Roll out the dough between two sheets of baking paper into a circle (32 cm Ø) and place it in a greased springform pan (26 cm Ø) with the help of a sheet of baking paper. Press the dough to the edge.

Cover the cake

Pour the quark mixture into the springform pan. Place the filled apples in it.

Bake

Bake in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas mark 3) for approx. 1 hour. If necessary, cover with aluminum foil towards the end if the surface becomes too brown. Let the cake rest in the switched-off oven with the oven door open for approx. 10 minutes.

Prepare jam

Heat 200 g apricot jam in a saucepan, bring to the boil and pass through a sieve.

Finish the cake

Loosen the cake from the edge of the springform pan and spread with the apricot jam. Dust with 1 tbsp of powdered sugar.
