Description

These tortillas filled with chicken and vegetables are an explosion of Mediterranean flavors! Perfect for a quick and tasty dinner, or for an informal brunch with friends. The preparation is very simple and the result is a colorful and inviting dish. I love them because you can customize them with the ingredients you have available. A delicious idea to get even the little ones to eat vegetables! The tender chicken and sweet peppers go perfectly with the melted cheese and the freshness of the lettuce. Try them, you won't regret it!

Ingredients (8 ingredients)

  • 4 piece Tortillas
  • 1 piece Chicken breast
  • 2 piece Peppers
  • 2 tbsp Extra virgin olive oil (EVO)
  • 1 pinch Salt
  • 1 piece White onions
  • 100 g Cheddar
  • 1 piece Iceberg lettuce

Preparation of the vegetables

Thermomix® Setting

Wash the peppers, remove the internal filaments and cut them into strips. Also finely slice 1 white onion. Insert the onion into the bowl and chop for 3 Sec./Stufe 5. Transfer to a non-stick pan.

Cooking the vegetables

Add 2 tablespoons of extra virgin olive oil to the peppers and onion in the pan. Stew for 10 Min. over low heat, season with a pinch of salt and set aside.

Preparation of the chicken

Cut 1 chicken breast into strips. In the same pan where the peppers were cooked, add the chicken breast fillets. Cook in the pan until they are well browned, season with salt and set aside.

Heating the tortillas

Heat one tortilla at a time on a non-stick pan.

Filling and closing the tortillas

Fill each tortilla with slices of cheddar cheese, a couple of tablespoons of peppers and onion, a few pieces of chicken and complete with iceberg lettuce. Close the tortilla by folding the bottom edge inwards and at the same time also the side edges inwards, finally roll the tortilla over the filling, tightly.

Final heating of the filled tortillas

Continue to heat the filled tortillas on the pan for a few minutes, until golden brown.

Service

When the tortilla filled with chicken is ready, cut it in half and serve.
