Description

This hearty vegetable stew from the Thermomix® warms you up on cold days. Frozen soup vegetables, potatoes, and lovage form the basis for this inexpensive main course. Seasoned with nutmeg and refined with mini bread dumplings, the stew is a complete meal. Prepared in just 35 minutes, this recipe makes two servings. Ideal for quick, wintry cuisine.

Ingredients (9 ingredients)

  • 450 g Frozen soup vegetables
  • 200 g Firm potatoes
  • 600 ml Vegetable broth
  • 1 Stück Small sprig of lovage
  • Salt
  • Pepper
  • Freshly grated nutmeg
  • 8 Stück Mini bread dumplings
  • 3 Stängel Parsley

Preparation (7 steps)

Prepare vegetables

Pour the frozen soup vegetables into a bowl and let thaw. Peel the potatoes and cut into 1 1/2 cm cubes.

Bring vegetable broth to a boil

Pour the vegetable broth into the mixing bowl and bring to a boil: 8 Min./100°C/Stufe 1.

Add vegetables and lovage

Add the potatoes, vegetables, and lovage to the mixing bowl. 10 Min./100°C/Stufe 1/Linkslauf.

Season

Season with salt, pepper, and nutmeg.

Cook bread dumplings

Thermomix® Setting

Add the mini bread dumplings to the mixing bowl and cook for 5 Min./100°C/Sanftrührstufe/Linkslauf.

Prepare parsley

In the meantime, wash the parsley, shake dry, pluck the leaves and chop.

Serve

Remove the bread dumplings from the mixing bowl and arrange in deep plates. Pour the stew over it and sprinkle with parsley.
