Description

This recipe for braised venison shank slices is a true delight, especially in the cold season. The venison shank is braised in a hearty dark beer sauce, which makes the meat particularly tender and aromatic. I like to make this dish for festive occasions such as Christmas or New Year's Eve. The root vegetables add an extra flavor and make the sauce nice and creamy. A fresh bread or potato dumplings go well with it. A hearty dish that is guaranteed to please everyone!

  • 1 x Venison shank
  • 1 Bündel Root vegetables
  • 1 Liter Game stock
  • 1 Liter Dark beer
  • Clarified butter
  • Flour
  • Salt and pepper

Prepare root vegetables

Clean the root vegetables and cut into coarse pieces. The size should be such that it can be easily chopped in the mixing bowl later.

Chop root vegetables

Put the prepared root vegetables into the mixing bowl and chop for 5 sec./speed 5. If necessary, use the spatula to push down from the edge and repeat the process.

Fry root vegetables

Remove the chopped root vegetables from the mixing bowl and set aside. Salt and flour the meat. Heat clarified butter in a pan and sear the venison shank slices in it on all sides. Remove the meat from the pan and sauté the chopped root vegetables in the same pan.

Prepare sauce

Deglaze the fried root vegetables with dark beer and let it reduce a little. Then add game stock so that the meat is covered. Put the meat back into the pan.

Braising

Let it braise in a closed pot or Dutch oven for 90 minutes. In the meantime, check whether there is still enough liquid and, if necessary, add dark beer or game stock.

Reduce sauce

To obtain a thick, creamy sauce, let it reduce at the end with the lid open. Make sure that nothing burns.
