Description

This dish of chicken simmered with autumn vegetables is a real treat for the taste buds. I love preparing this recipe, especially when the days get shorter and the desire for comforting dishes is felt. The chicken, tender and flavorful, is imbued with the aromas of pearl onions, smoked bacon and button mushrooms. The potatoes, melting at will, complete this generous and family dish. A little dry white wine and chicken broth enhance the whole thing. It's a perfect dish for a convivial dinner with family or friends. Easy to make with the Thermomix®, it requires little preparation time and simmers quietly to reveal all its flavors. A real delight!

Ingredients (13 ingredients)

  • 1 piece Chicken cut in pieces
  • 3 bunch Pearl onions
  • 150 g Smoked bacon
  • 18 piece Button mushrooms
  • 8 piece Potatoes
  • 15 cl Dry white wine
  • 1 l Chicken broth
  • 1 c. à soupe Flour
  • 4 branche Thyme
  • 30 g Butter
  • 5 cl Olive oil
  • to taste Salt
  • to taste Pepper

Preparation (8 steps)

Preparation of vegetables and bacon

Peel the small pearl onions. Cut the smoked bacon into small sticks. Clean and cut the button mushrooms into quarters. Peel the potatoes and cut them into dice. Reserve all ingredients.

Brown the chicken

In a large frying pan, heat the butter and olive oil. Brown the chicken pieces for 15 minutes, turning them regularly. Remove the chicken and set aside on a plate.

Cooking onions and bacon

Put the pearl onions, smoked bacon and diced potatoes in the Thermomix® bowl. Add 2 tablespoons of chicken broth.

Sauté the vegetables

Sauté the vegetables and bacon in the Thermomix® for 10 minutes at 120°C, speed 1.

Addition of chicken and flour

Thermomix® Setting
2 min/212°F/Speed 1 100

Put the chicken pieces back into the Thermomix® bowl. Sprinkle with flour and mix gently for 2 minutes at 100°C, speed 1.

Deglaze with white wine

Thermomix® Setting
3 min/212°F/Speed 1 100

Pour the dry white wine into the Thermomix® bowl and let the alcohol evaporate for 3 minutes at 100°C, speed 1.

Simmer the chicken

Thermomix® Setting
30 min/203°F/Speed 1/Linkslauf 95 Reverse

Add the button mushrooms, chicken broth, thyme, salt and pepper to the Thermomix® bowl. Cover and simmer for 30 minutes at 95°C, speed 1, in Linkslauf.

Adjust the seasoning

Taste and adjust seasoning if necessary. Serve hot.
