Description

This focaccia swirl is an explosion of Mediterranean flavors! The combination of sweet cherry tomatoes and salty Taggiasche olives, wrapped in a soft and fragrant dough, makes it perfect for a Sunday brunch or as a delicious appetizer. The preparation is a bit long, but it is absolutely worth it. I often prepare it for family parties and it always disappears in the blink of an eye! A tip? Try adding a little fresh oregano for an even more intense aroma. Ideal to share and perfect for an outdoor picnic.

  • 100 g 00 flour
  • 400 g manitoba flour
  • 7 g dry brewer's yeast
  • 1 tsp sugar
  • 250 g water
  • 10 g fine salt
  • 40 g olive oil
  • cherry tomatoes
  • taggiasche olives

Preparation of flours and yeast

In the Thermomix bowl, pour 100 g of 00 flour, 400 g of manitoba flour, 7 g of dry brewer's yeast and 1 teaspoon of sugar. Mix to combine the ingredients.

Adding water and initial kneading

Gradually add 250 g of water to the bowl, while the Thermomix is running. Knead to combine the water with the flours.

Adding salt and kneading

Add 10 g of fine salt to the bowl and continue kneading to combine the salt with the dough.

Adding oil and final kneading

Add 40 g of olive oil to the bowl and continue kneading until a smooth and elastic dough is obtained.

Dough leavening

Transfer the dough to a lightly oiled bowl, cover with plastic wrap and let it rise in a warm place for about 2 hours or 2 and a half hours, until it doubles in volume. No Thermomix settings required for this step.

Rolling out the dough

Transfer the leavened dough to a floured work surface and form a long sausage shape. Then flatten it slightly with a rolling pin until you get a strip about 8-10 cm wide. No Thermomix settings required for this step.

Filling and rolling

Brush the surface of the dough with a little olive oil. Cut the cherry tomatoes into quarters and distribute them on the dough. Add the Taggiasche olives and roll the strip of dough around the filling. No Thermomix settings required for this step.

Arrangement in the pan and seasoning

Place the filled swirl in a 24 cm diameter round baking pan with the bottom lined with parchment paper and complete the filling with some cherry tomatoes and some olives in addition. Season with fine salt and oregano to taste. No Thermomix settings required for this step.

Baking in the oven

After the time has elapsed, brush the surface with olive oil. Bake in a preheated ventilated oven at 180 °C for 40 minutes or until golden brown. No Thermomix settings required for this step.

Cooling and serving

Once ready, let it rest for half an hour outside the oven and then serve the focaccia swirl. No Thermomix settings required for this step.
