Description

Golubtsi are stuffed cabbage rolls made with a minced meat and rice filling and baked in the oven. This recipe combines white or pointed cabbage with mixed minced meat, rice, onions and eggs. The Golubtsi are braised in a sauce of tomato paste, cream and spices. A hearty main course, ideal for the cold season.

Ingredients (16 ingredients)

  • 1 kg mixed minced meat
  • 1 kg white cabbage or pointed cabbage
  • 200 g rice
  • 2 Stück onions
  • 2 Stück eggs
  • 2 Stück onions
  • 2 Stück large carrots
  • 2 EL tomato paste
  • 200 g whipping cream
  • 4 Stück garlic cloves
  • 500 ml water
  • salt

Preparation (13 steps)

Cook rice

Cook 200 g rice in a saucepan with water according to the package instructions and let cool.

Prepare white cabbage

Finely chop 1 kg white cabbage or pointed cabbage and knead a little.

Dice onion

Place 2 onions in the mixing bowl and chop for 3 sec./speed 5.

Prepare minced meat mixture

Place 1 kg mixed minced meat, the prepared white cabbage, the cooked rice, the diced onions and 2 eggs in a bowl. Season with salt and pepper and knead well.

Shape Golubtsi

Form 24 Golubtsi from the minced meat-white cabbage-rice mixture and place them close together in a greased baking pan (3 rows of 8 each).

Bake Golubtsi

Place the baking pan in the preheated oven at 170°C convection for 20 minutes.

Chop onions for the sauce

Place 2 onions in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 2 tbsp oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add carrots

Thermomix® Setting

Grate 2 large carrots finely and add to the onions in the mixing bowl. Sauté briefly for 2 min./120°C/speed 1.

Add garlic

Press 4 cloves of garlic through a press and add to the onion-carrot mixture in the mixing bowl.

Stir in tomato paste

Add 2-3 tbsp tomato paste (or 3 fresh tomatoes, peeled and chopped) to the mixing bowl and stir in for 2 min./100°C/speed 1.

Finish sauce

Add 200 g whipping cream and 500 ml water to the mixing bowl, simmer for 3 min./100°C/speed 2-3 and season with salt and pepper.

Pour sauce over Golubtsi and finish baking

Take the baking pan with the Golubtsi out of the oven, spread the sauce over them and put them back in the oven for another 30-40 minutes.
