Description

This game goulash with chestnuts and a fresh orange gremolata is an absolute highlight for the cold season! I especially like to make it for Christmas or New Year's Eve because it is so festive and warming. The tender game meat, the sweet chestnuts and the fruity gremolata harmonize perfectly. The long braising time ensures that the meat becomes tender. A hearty dish that can be prepared wonderfully and is guaranteed to taste good to everyone. A real treat!

  • 1.2 kg Game goulash
  • 1 Bund Soup vegetables
  • 2 Stück Onions
  • 30 g Clarified butter
  • 2 EL Tomato paste
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 375 ml Red wine
  • 400 ml Game stock
  • 1 Stück Bay leaves
  • 2 Stück Cloves
  • 1 Stück Organic orange
  • 1 Zehe Garlic
  • 1 Bund Smooth parsley
  • 30 g Sugar
  • 10 g Butter
  • 400 g Chestnuts

Prepare soup vegetables and onions

Clean the soup vegetables and chop them roughly. Peel and quarter the onions.

Chop soup vegetables and onions

Place the prepared soup vegetables and onions in the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula.

Sauté vegetables

Add the clarified butter to the chopped vegetables in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add the tomato paste and sauté for another 2 min./120°C/speed 1.

Sear meat

Brown the game goulash in portions in a separate pan with some clarified butter and then add to the mixing bowl.

Season and deglaze

Season the meat with salt and pepper. Add the red wine and game stock to the mixing bowl. Add bay leaves and cloves.

Simmer goulash

Prepare orange

Wash the organic orange with hot water, grate the peel and squeeze the juice.

Chop garlic

Peel the clove of garlic, put it in the mixing bowl and chop for 3 sec./speed 7.

Chop parsley

Wash the smooth parsley, shake dry, chop coarsely and add to the mixing bowl together with the orange zest and garlic. Chop for 5 sec./speed 5.

Prepare gremolata

Remove the chopped parsley, garlic and orange zest from the mixing bowl and set aside. This is the gremolata.

Refine goulash

After the cooking time, add sugar, butter and chestnuts to the goulash in the mixing bowl and heat for another 10 min./100°C/reverse rotation speed 1.

Season and serve

Season the goulash with salt, pepper and orange juice. Serve sprinkled with the orange gremolata.
