Description

These chicken mimosas are a gourmet twist on a classic! I love preparing this recipe for a spring brunch or a festive aperitif. The sweetness of the eggs goes perfectly with the delicate flavor of the chicken and the freshness of the cream. It's simple, quick and always a success. You can easily prepare the filling in advance and garnish the eggs just before serving. For a lighter version, you can replace part of the mayonnaise with Greek yogurt. A real delight for the taste buds!

Ingredients (10 ingredients)

  • 6 piece Egg(s)
  • 2 c. à soupe Cooked chicken breast(s)
  • 4 c. à soupe Mayonnaise
  • 2 c. à soupe Fresh cream (thick)
  • 1 c. à café Vinegar
  • 1 piece White onion(s)
  • 1 pinch Espelette pepper
  • Coarse salt
  • Salt
  • Pepper

Preparation (7 steps)

Prepare eggs

Place 6 eggs in a saucepan and cover with cold water. Place the saucepan on the stove and bring to a boil. Once the water boils, cook for 2 minutes. Remove from heat, cover and let sit for 15 minutes.

Chop onion

Peel and quarter 1 small onion and place in the mixing bowl. Chop 3 sec/speed 5. Scrape down the sides with the spatula.

Halve eggs and remove yolks

Peel the boiled eggs, cut them in half and carefully remove the yolks. Place the yolks in a bowl and mash with a fork.

Prepare filling

Thermomix® Setting
10 sec/Speed 3

Place the mashed egg yolks with 2 tablespoons of cooked chicken, 4 tablespoons of mayonnaise, 2 tablespoons of crème fraîche, 1 teaspoon of vinegar, the chopped onion and 1 pinch of Espelette pepper in the mixing bowl. Mix 10 sec/speed 3.

Season

Season the filling with salt and pepper and add more seasoning if necessary.

Fill eggs

Fill the egg yolk mixture into the hollowed egg white halves.

Chill

Refrigerate the filled eggs for at least 1 hour.
